We can’t all be Gillian McKeith, soaking aduki beans for hours on end to make strange stews or kick-starting each day with a beetroot and broccoli smoothie, but it’s easier than you might think to knock together healthy spaghetti bolognese that the kids will actually enjoy. If you don’t have kids, our spag bol is just as good for a romantic dinner for two or a tasty meal for one. Just make as little or as much as you need and with many of the recipes you can freeze what you don’t eat and save it for another day.
Tasty but Healthy
To make this classic family favourite a little bit healthier, why not try using Quorn mince instead of lamb or beef? This versatile meat substitute is naturally low in fat, saturated fat and high in protein and is widely available in the freezer section of supermarkets. And don’t worry, it tastes great too! In fact, we bet you will hardly notice the difference.
Add plenty of veggies to the sauce to get you and your family one step closer to your five a day, without the kids even knowing! And finally, use wholemeal instead of white spaghetti to add some complex carbs to your meal: perfect for long-term energy to keep you focused when you play bingo online at Littlewoods Bingo!
1. Chop the onion roughly.
2. Heat the olive oil in a large saucepan or wok.
3. Add the onion and crushed garlic to the heated oil and fry for a couple of minutes.
4. Add your chopped green pepper and fry for another 2-3 minutes or until slightly soft.
5. Add your Quorn mince and dried herbs and fry for a further 2-3 mins or until the mixture is slightly browned.
6. Add the (drained) kidney beans, pesto, tomato puree, chopped tomatoes and about 150ml of water.
7. Season with salt and pepper to taste (too much salt isn’t great for you, so go easy on it or use a “lo salt” variety), bring to the boil and simmer gently for about 20 minutes uncovered.
8. Get your wholemeal spaghetti on the go around this time. (Simply follow cooking directions on the back of the pack, but it will usually take around 10-15 mins of gentle boiling.)
9. Serve your Bolognese with the spaghetti, adding extra black pepper and dried herbs if required.
